For this National Pecan Pie Day – Sunday, July 12 – we challenged our team of culinary experts to turn one Marie Callender’s® Southern Pecan Pie into three different pecan pie desserts. After some kitchen deliberation and experimentation, they were able to create three, no-bake desserts out of one pecan pie! The best part about the delicious desserts our culinary team created? Anyone can easily make them at home. So, grab that Southern Pecan Pie and get ready to turn your pie into something new and equally delicious.
Dessert No. 1: Pie Ice Cream Treats
What you’ll need: aluminum foil, no-stick cooking spray, 1/2 of a pecan pie, 3 cups of softened vanilla ice cream, pecan halves, caramel syrup.
To make: Line an 8x8-inch baking pan with aluminum foil that extends over the edge of the pan. Spray foil with no-stick cooking spray. Place 1/2 of a thawed pecan pie into a large bowl. Break the pie into pieces, stirring to combine the pecan pie crust into the pie filling. Evenly spread pie mixture into baking pan. In a separate bowl, stir vanilla ice cream until smooth. Spread ice cream over pie mixture and evenly top with pecan halves. Cover baking pan with aluminum foil and freeze overnight. Once frozen, cut Pie Ice Cream Treats into 16 squares, drizzle with caramel syrup and serve.
Dessert No. 2: Pecan Pie Parfait
What you’ll need: 1/4 of a pecan pie, 4 vanilla pudding cups (3.25 oz each), and Reddi-wip®.
To make: Remove the upper edge of pie crust from your pie and snack away! You won’t be using it for your Pecan Pie Parfaits. Cut 1/4 of thawed pecan pie into 4 thin slices. Then, cut each thin slice in half. For each parfait, spoon half of 1 container of vanilla pudding into a small dish. Top pudding with 1/2 pie slice. Repeat with remaining pudding and pie. Top with Reddi-wip and enjoy.
To make: Place 1/4 of a thawed pecan pie, 3 whole graham crackers broken into pieces, and 1/4 cup quick-cooking rolled oats into a food processor. Process until mixture is crumbly. Divide pie mixture into 12 portions. Roll portions into balls. Cover with chopped pecans and drizzle with melted chocolate, if desired. Refrigerate Pecan Bites until you’re ready to serve.
